How it all started
From the beginning, Sweet Caroline Cheesecakes was not intended to become a business. The founder, twelve year old Emily “Caroline” Patterson, became interested in baking during the pandemic year of 2020. She would look up recipes for baking cakes and would make them for her family at their Sunday dinners.
Nearing the end of 2020 her brother, Liam, asked her if she could bake him a cheesecake because it is his favorite. He loved it, the family loved it, and their friends loved it. A request was made from someone for Emily to bake a cheesecake and he wanted to pay her for her cake and her time.
Emily and her family saw this as a great opportunity for her to raise some money to buy a mixer that she had been wanting for a long time. Well, Emily raised the money for her mixer within a couple of weeks, and fast forward a couple of months later and Sweet Caroline Cheesecakes was born in March of 2021.
